Chef John Wei from Fuzhou in southern China will share his authentic jiaozi (pronounced jow-za) or dumpling recipe with locals this Saturday, May 4, in an intimate workshop that will raise funds for the Rural Fire Service.

Mr Wei has been living in Yass with his wife Jin Xiao since late last year, helping his daughter and son-in-law, Catherine and Tom O'Dea, and their son to settle in. His trip down under will soon, however, come to an end.
Before leaving, Mr Wei would like to share a cuisine he's passionate about and give something back to the community he's enjoyed being a part of, Mr O'Dea said.
Mr Wei learnt how to cook while serving as an officer in the Chinese military. Jiaozi is not a traditional dish in southern China, but it is in the north-east, where Mr Wei was based for some time, Mr O'Dea explained.
Mr O'Dea said the people of Fuzhou love Mr Wei for his jiaozi and the people of Yass have also come to love his culinary skills.
While living in town, Mr Wei has been swapping food with locals and his authentic jiaozis have been the most popular.
"He wanted to set people up to make their own when he leaves," Mr O'Dea said.
Mr Wei has been shocked by the number of bushfires in Australia and decided to donate all funds raised by the workshop to the RFS.
Mr O'Dea said it will be a fun workshop. He said that Mr Wei had spent a couple of hours on Tuesday writing his recipe, which Mrs O'Dea was translating for workshop participants to take home with them.
Mr Wei will be making vegetarian and meat jiaozis and people are invited to eat their creations during the workshop or to bring a container to take them home.
No experience is necessary and all ages are welcome.
